To make a segment hidden, select it with the Subselect tool and then check the "Hidden" checkbox in the Properties Palette:

When you change the segment to hidden, the segment will go partially transparent to show that the selected segment is hidden:

And if you click on another segment to deselect the one you made hidden, it will change from its normal color to transparent gray:
